My fiance and I tried out the zero calorie penne pasta that he bought from Holland and Barrett. It wasn’t so great. But I have read that the penne isn’t the best example of the zero cal pasta, so I would like to try the fettucine and spaghetti as well before I decide that it is all slimy and seaweedy.
For this dish, I roasted the butternut with pine nuts, then tipped that into a pan with Alpro vegan soya cream, garlic, herbs and olive oil. I let it simmer, then added the rinced pasta, tore up some sage and mixed it all together for a few minutes. A sprinkling of vegan parmesan and voila :-) The flavours were delicious, but the pasta wasn’t that great.
